What is spell hit rating for?

What is the importance of spell hit rating? I am a holy spec'd priest, should I be concerned with having spell hit rating?

Spell hit rating affects

Spell hit rating affects your chances of being resisted/partial resisted on spell damage to mobs. The classes that need to be concerned with hit rating are classes that do DPS, and can have their spells resisted.

As a holy priest I imagine you should be most concerned with +healing and +crit as your primary function seems to be healing. If you however are supposed to be doing DPS, spell hit will be the best stat for you until you reach the cap, which is about 202.

It's a shame that there are not more types of gems for these classes, who will mostly not get the socket bonuses, because of using all +dmg gems.
